I’m so excited! Tonight is the night! At 11pm on Showtime Lisa Kudrow’s show Web Therapy premiers. The show started as an improvised web series (above is the first episode) and now they added extra scenes to the original seasons to make it a full length show.
If you haven’t heard of Hungry Girl, it’s basically a website, cookbook series, and TV show that this lady Lisa Lillien started, where she takes good food and makes it less good (but less calories…you win some, you lose some). Some of her recipes are questionable. Like anything that should be fried, she coats in egg whites and crushed up Fiber One cereal and bakes. I’ve made her onion rings…they taste like onions rolled in Fiber One… and then 10 minutes after eating your intestines start screaming.
The dessert recipes are good, though- the low fat pumpkin pie filling tastes just like the real thing, and I just made some apple fritters that I thought were good.
For Apple Mixture:
3 cups peeled Fuji apple chunks
3 tablespoons Splenda (or 5 Stevia packets)
1 tablespoon cornstarch
1 teaspoon cinnamon (or apple pie spice)
1 teaspoon vanilla extract
For Fritter Base:
1 1/3 cups regular oats (not instant)
2/3 cup Bisquick Heart Smart baking mix
2/3 cup light vanilla soymilk (or skim with a teaspoon vanilla extract)
2 tablespoons brown sugar (not packed)
1 1/2 tablespoons light whipped butter or light buttery spread
1 teaspoon baking powder
Preheat oven to 400 degrees.
Place apple chunks in a medium microwave-safe bowl with 1/4 cup of water. Cover and microwave for 2 1/2 minutes. Once bowl is cool enough to handle, drain water and set aside.
In a medium pot, combine Splenda, cinnamon, vanilla and cornstarch with 1/2 cup cold water. Cook over medium heat, stirring occasionally. Cook and stir until thickened to a caramel sauce consistency. Remove from heat and stir in apple chunks. Set aside.
In a large mixing bowl, combine all ingredients for fritter base until mixed well. Fold in apple mixture.
Spray a 12-piece cupcake tin with non stick cooking spray, and spoon in batter evenly.
Bake 10-15 minutes, until a toothpick inserted in the center of the fritter comes out clean. Allow to cool slightly before eating.
Makes 12 servings
Per serving (1 fritter): 93 calories, 1.75g fat, 121mg sodium, 17.5g carbs, 1.5g fiber, 5.5g sugars, 2g protein
I enjoyed a little Sunday brunch of chocolate chip and coconut pancakes and white trash mimosas (Andre and tropicana in a glass acquired from a yard sale) on the porch with my family. Oh! and the delicious maple syrup was homemade by my uncle, which is some classic NH charm. It just makes you want to stay at a bed and breakfast and go on a foliage tour, huh?
So far it’s been a productive day so I feel pretty proud–or as proud as you can feel when you are unemployed and living with your parents. When I relax tonight and watch Ice Loves Coco I’m really going to feel like I deserve it.
Well, I had so many plans for this most special of days, my designated day of drink. First, I was going to make a bellini sorbet, and after spending my precious yoga money buying the ingredients, I couldn’t find my mom’s ice cream maker in our Hoarders episode of a basement. Then I decided to try this new bottle of mojito mix that’s made with Splenda, which ended up just tasting like gum. Rum gum, if you will. I added lemonade until it was drinkable, but still, I feel so defeated.
This song is from the wonderful movie– nay, the flawless and indisputable seminal classic– The Jerk starring Steve Martin and Bernadette Peters (go watch it now- the comedy still translates… like how Golden Girls is still funny, but The Jerk is even funnier… and not at all about old lady bosom buddies]).
I’m either going to walk down the aisle to this song or have it be the first dance. This is non-negotiable and also a test. If the man I’m betrothed to isn’t totally psyched and emotional over this song choice, I have obviously settled and need to Crystal Harris this sitch, as in call it OFF.

Here’s a great newish way to spend your time instead of human interaction or reading. Pinterest! You can have a place to collect inspirational pictures to create your own little digital mood boards. Actually writing it down makes it sound way less interesting and way more of a time waster that I originally thought. Ah, well! I have to go check facebook, BYE!
These mini pretz-a-bagels are my new favorite empty calories. My mom found these a few days ago, and I think I ate the whole bag during my usual weekend eating free-for-all.
Some delicious ways to eat them:
With Strawberry or Blueberry cream cheese
Butter and jelly
Brie and fig jam (please don’t be intimidated by how fancy I am).
You’re going to pass out about 20 minutes after consuming them, so be pretty strategic about when you eat it. Maybe on a weekend when you can nap and don’t feel the need to accomplish anything for the rest of the day. Wooorth ittt.
A few years back Jello came out with some limited edition strawberry daiquiri, pina colada, and margarita non-alcoholic jello flavors, which I think was a little wink to all us binge drinkers out there. Jello knows what’s up. It’s a shame they don’t still make them, but they’re easy enough to make from scratch to impress the young alcoholics in your life.
Strawberry Daiquiri Jello Shots
4.5 ounces Rum
3 ounces Triple Sec
.5 ounce Lime Juice
1 cup boiling water
Add a cup of boiling water to the jello in a medium sized bowl, stirring until it’s dissolved. Then add the alcohol and lime juice, stir. Fill up some dixie cups or whatever, then refrigerate for a few hours until it’s firm enough for you to throw back.
I know it’s supposed to be jello shots but I plan to just eat this during the Watch What Happens Live drinking game and see what happens. Don’t judge me.
